I thought Nolan didn't allow water bottles.

Was that really confirmed? Didn't Fionn and Harry joke about catering/snacks in interviews?

Probably just exaggeration of the truth. Maybe more like when Nolan is shooting, no water bottles, or something to that effect. I highly doubt he dehydrates his cast and crew.
