What do you mean by "HDR was used very mildly on this movie"?
As far as I understand HDR in its current form is basically an added affectation. Not that different from converting a non 3D film to 3D. For a film like Dunkirk it's basically revisionist, even if approved by Nolan.

Grain, if anything, is a sign of quality. It means the image is resolved down to the grain. If there is no grain in a presentation it either can't resolve it properly or it has been tampered with. In principle, I don't think any information would be lost from the negative to the print.
But it is.

You don't want the edge of the frame, with hair and other crap, on the screen.
The projector should do some cropping and so should the screen masking, if it exists.
