Just so you know George Lucas only directed the first of the original trilogy, but he did direct all of the prequel trilogy.

Orson Welles - Chimes at Midnight/ Kane /Touch of Evil / Othello (could do wonders with nothing at all, unfortunately that's all he ever had to work with after the first couple flicks. Easily the most heroic of filmmakers for me.)
Kubrick - Paths of Glory / 2001 / Barry Lyndon (amazing stuff)
Richard Brooks - The Professionals / Bite The Bullet / Looking for Mr. Goodbar (lots of bad ones, too, though, but great writer-director)
Peckinpah - Ride the High Country / The Wild Bunch - mythic and real at same time.
Sidney Lumet - Network/Dog Day Afternoon/ The Hill/Fail-Safe/The Pawnbroker ... Lumet is so good his pictures rarely even need scores!
Cuaron - have only seen Children of Men and Potter 3 so far, but he seems like a genius to me
