I’d say The Shining but there really is no wrong answer with Stanley.
Eyes Wide Shut would be the wrong answer when it comes to Stanley.

I watched Dr. Strangelove probably more often than any other of his films, though I tend to think that there is no way that Eyes Wide Shut is better than Clockwork Orange or Barry Lyndon, the latter being my candidate for being Kubrick's absolute best film.

2001 is slightly more impressive technically but Interstellar is a better, more engaging story and movie overall.
